Walnut Torte - Tort Orzechowy

Tort Orzechowy is a recipe that has been handed down by Wiesia Paszkiewicz and was the torte of choice for all celebrations. I have only recently recovered this recipe after I had misplaced it for some time. Tort Orzechowy is the "must have" torte for Olek.
· 6 eggs – separated into yolks and whites
· 6 tbs sugar
· 6 tbs walnuts – ground to a fine meal
· 6 tbs self-raising flour
Method
Beat egg yolks and sugar until white. Add ground walnuts to egg and sugar mixture. Add self raising flour to mixture. Beat egg whites until stiff, then fold into mixture
Prepare baking tin, grease with unsalted butter and sprinkle with breadcrumbs
Bake at 185 for approx. 45 minutes
Coffee Filling
· 2 eggs
· ¾ cup sugar
· 3 tsp instant coffee dissolved in water
· 250g unsalted butter
Beat sugar and butter until soft, add eggs one at a time, add coffee, beat until mixed thoroughly
Cut the torte into two or three layers, once cooled, and "season" with a generous number of drops of good alcohol, Kahlua is a good coffee flavoured liqueur but it is up to you, as is the amount. If this is to be served to children then perhaps err on the side of less. Apply the filling to each layer, remembering to leave enough for decoration on the top and sides. This is a very torte, so serve small slices, and I would suggest that a strong black coffee accompanies this torte very well.
