Anne's Macaroni Cheese Bake

Ingredients

  • 500g elbow pasta

  • 2 eggs

  • 600 ml thickened cream

  • 500g cottage cheese

  • Shredded tasty chees

  • Grated parmesan cheese

  • Paprika

Preparation

  1. Boil the pasta till cooked (but still firm) then tip into the drainer

  2. In the same pasta pot, once cooled, crack two eggs and whisk lightly

  3. Add thickened cream to the eggs and continue whisking to mix thoroughly

  4. Add the cottage cheese to cream and egg mixture, stir through with a ladle

  5. Add tasty and parmesan cheese to preferred taste

  6. Tip the drained pasta back into the pot and gently stir through with the egg and cheese mixture

  7. Pour the contents into a glass baking dish. (Hint, there will probably be a creamy mixture at the bottom of the pot, so be sure to spread this evenly over the top of the bake.)

  8. Sprinkle paprika evenly over the surface of the bake.

Cooking

Pre-heat the oven to 180°C.

Place foil over the top of the baking dish

Place in the oven for approx. 40 minutes (or until you notice the creamy mixture is bubbling in the bottom of the dish

Take off the foil and leave in the oven to brown the top.

Remove from the oven and allow to sit for 10 minutes before serving in the dish.
