Kirstin's Hummus

Kirstin very kindly shared her recipe for Hummus. As a staple for many of us, this recipe should be tried, adjusted and cherished.

Ingredients:

• 2 x 400g cans of Chickpeas

• 7 tblsp liquid from chipeas can

• 4 tsp Tahini

• Juice of 1 Lemon

• 1 tsp ground cumin

• 1 tsp paprika

• 1 tsp ground sea salt

• 6 tblsp olive oil (OR 5 olive and 1 sesame oil)

• 1 clove of garlic (optional)

Method:

• Drain chickpeas and rinse with cold water (save the chickpea juice for later)

• Add chickpeas, tahini, chickpea juice, lemon juice, salt, paprika, cumin (and garlic) into a food processor/blender

• Turn on the blender and slowly pour in the oil whilst it runs

Kirstin's notes

The sesame oil isn’t in any traditional recipe, I just love the taste so put it in my own. You can use all olive oil instead and that's what the normal recipes ask for

And if you do only make half of the recipe, I wouldn't completely halve the spices - I did that once and it was a bit too bland. But you can taste it as you go of coarse
